Happy Halloween Everyone! I never thought of sharing my roasted pumpkin seeds recipe, I thought everyone did it the same way. Silly me, after seeing everyone’s great recipes for pumpkin seeds, I realized I am one of the few cooks who roast the seeds the lazy way! In most recipes, you either wash or boil the seeds before hand. But I feel that this washes away all of the good stuff. I start by removing the pumpkin seeds and simply removing the stringy part away from the seeds by hand. I then spread the slimy seeds on a cookie sheet, sprinkle with kosher salt and roast. The unwashed pumpkin seeds form a beautiful and tasty caramelization which adds another layer of flavor. So don’t worry, if you feel lazy, no need to wash your pumpkin seeds, just through them on the pan and roast. You will have a delicious surprise!

Ingredients

  • a pumpkin, seeds removed
  • kosher salt

Method

  1. Preheat oven to 350 degrees. Remove seeds. Pull off the stringy part from the seeds. Place the seeds in a single layer on a cookie sheet.
  2. Stir the seeds around on the cookie sheet every few minutes to insure even caramelization.
  3. Roast until brown and fragrant.
