<p>Spanish omelettes are a perfect cheap meal for a busy weeknight.  They are also referred to as tortilla espanolas. Every Spanish country and every family has there own special recipe, and I have had so many delicious versions. My rule for these wonderful potato omelettes is that there are no rules, except to have 2 of the ingredients be eggs and potatoes. Beyond that, just clean your refrigerator out and get creative. Now that my hubs is in his first of three unpaid internships, I will be trying to cut corners when ever possible. Eggs are a great way to stretch a buck, especially when you add potatoes. Instead of adding cheese, I added some smoky bacon.</p>
<p>Here are all of the colorful veggies before I added the eggs. Most people slow cook the omelettes on the stove-top, covered, or bake them. To speed things up, I finished it off quickly under the broiler before serving.</p>

<p>This is an easy recipe for french toast with a few popular variations. French toast is a very popular and easy to make meal for anytime of day. According to Wikipedia, it was originally called German toast here in the states before the first world war. But because of anti-German sentiment, the name was changed to French toast. Stale bread dipped in egg and then fried has actually been around since Roman times. Though it has many different names in different cultures, it is essentially the same. It is a dish that I, like many of you, grew up with and still enjoy today. The key to great french toast is to use quality ingredients. I love to experiment with the many types of bread to make french toast. My favorite is to just use day old french bread, as shown in the photo, but I also love to use any variety of breads that contain nuts and seeds. Sourdough and challah bread are also wonderful to make french toast with. The best french toast is made with bread a little on the stale side. I have also found that cream mixed with the eggs makes the best toast. But if you are watching calories, just whole milk, or even nonfat milk. You can add any type of fresh fruit you have on hand to make a delicious and nutritious breakfast.</p>

<h3>French Toast Recipe</h3>
<p><strong>Ingredients</strong></p>
<ul>
<li> 4 eggs</li>
<li> 1/2 cup whole milk, half and half, or cream</li>
<li> 1 tablespoon honey</li>
<li> 10 &#8211; 12 slices of day old bread of your choice</li>
</ul>
<p>To add some variety to your toast, try these following variations:</p>
<h3>Orange French Toast</h3>
<p><strong>Ingredients</strong></p>
<p>1/4 teaspoon orange extract, and 2 teaspoons of grand marnier<br />
the zest of an orange</p>
<p>Just mix these ingredients in the egg batter, the alcohol is optional.</p>
<h3>Almond French Toast</h3>
<p><strong>Ingredients</strong></p>
<p>1/4 teaspoon almond extract, and 2 teaspoons of amaretto<br />
1 cup slivered almonds</p>
<p>Mix the extract and optional alcohol in the egg batter, and then dip the toast in the egg batter, and then in the slivered almonds before frying.</p>
<h3>Cinnamon Spice French Toast</h3>
<p><strong>Ingredients</strong></p>
<p>1/2 teaspoon ground cinnamon<br />
1/4 teaspoon nutmeg</p>
<p>Just mix these ingredients in the egg batter.</p>
<h3>Buttermilk French Toast</h3>
<p><strong>Ingredients</strong></p>
<p>Just substitute the milk or cream with buttermilk.</p>
<h3>Vanilla French Toast</h3>
<p><strong>Ingredients</strong></p>
<p>1 teaspoon vanilla extract, and 2 teaspoons of good whiskey or scotch</p>
<p>Just add these ingredients to the egg batter, the alcohol is optional.</p>
<h3>Stuffed French Toast</h3>
<p><strong>Ingredients</strong></p>
<p>Add sliced bananas or strawberries with a smear of softened cream cheese between two slices of bread, then dip the sandwich in the egg mixture.</p>
<p><strong>Method</strong></p>
<ol>
<li> Preheat Skillet. Add enough olive oil to coat. Whisk together all ingredients. Dip bread and coat completely in mixture.</li>
<li>Cook on each side until golden brown. Cook on medium to medium low heat. Be careful not to burn. Try not to flip the toast more than once.</li>
<li>Serve immediately. Keep in mind you can also change the flavor of the recipes by changing the type of bread you use.</li>

<p>Zucchini fritters are sort of like potato latkes. I have created this recipe with more egg and less flour, which makes them thinner and crispier. They are quick and easy, and very nutritious. They make a perfect fast dinner that is very economical. You can also serve them for breakfast or brunch. They are packed with protein and vegetable goodness. Kids love them, and this is a great way to get more vegetables in your kids. Serve them with plain yogurt, sour cream, or a quick blender Hollandaise sauce (as shown in the photo). We had these for dinner with toast and jam, it was so simple, yet so very tasty.</p>

<h3>Zucchini Fritters Recipe</h3>
<p><strong>Ingredients</strong></p>

<li> 4 zucchini squash, shredded, about 4 cups</li>
<li> 4 eggs</li>
<li> 1/2 cup flour</li>

<li> pepper to taste</li>
<li> 1/4 teaspoon nutmeg</li>
<li> olive oil</li>
</ul>
<p><strong>Method</strong></p>
<ol>
<li> Grate the zucchini in a large bowl over paper towels,. Try to squeeze as much of the moisture out of the zucchini as possible before adding them in your mixing bowl.</li>
<li>Combine grated zucchini, eggs, flour, salt, pepper, and nutmeg in a large mixing bowl.</li>
<li>Preheat a large skillet, Drizzle with  olive oil. Drop 1 large overflowing tablespoon of the batter into the skillet. You should make them the size that so that three of them will fit in your large skillet.</li>
<li>Cook until browned and crisp, trying to flip only once. Transfer the done ones to a paper towel lined plate. Serve with plain yogurt, sour cream or Hollandaise sauce.</li>

Pancake mix is expensive, and I told her it is so easy and cheap to make your own batter.  And best of all, its fast!  So this post is dedicated to my young sister-in-law, trying to make ends meet while in college. I think most people either make pancakes the traditional way, or thin with crispy edges.  I adore thin with crispy edges. Its kind of a cross between a crepe, a pancake, and  some crunchy edges thrown in for fun. Spreading the pancake batter in a thin layer, and adding additional olive oil with each pancake, makes crispy edges. This recipe can also be used for waffles. There are some amazing waffle irons that make the cutest shapes, characters for kids, farm animals, roses, and other amazingly cute shapes.
